Recipe Post: Pickled Onions

Hi!! Sorry, no adventure today 😦 But… I have a cool recipe!

I LOVE onions, so much so that I always ask for 3 orders when getting a salad. Well, last week, the place ran out of onions, so they offered me pickled onions. Why not! Best decision EVER. That got me thinking- I can pickle daikon, how hard could onion be ? Let’s get cooking!

Pickled Onions

Ingredients

  • 1 medium red onion, sliced
  • 2.5 tsp salt
  • 5tsp sugar
  • 1/4 cup+ 1tsp lemon juice (or vinegar of choice)

Directions

Place  onion slices in a bowl with salt and sugar and let sit for 30 min or until there’s plenty of liquid. Transfer onion and liquid into a glass jar; add vinegar and seal the jar (make sure its air tight!). Let sit for at least 3-5 days. Serve and enjoy!

Note: The pickling process emits a STRONG smell- keep the jar sealed!
