Easy Meatballs
Ingredients
- 4 3oz Keilbassa links
- 2 eggs
- 1/2 cup panko bread crumbs
- 2tbsp grated cheese
- 1/2 large onion, sliced
- 1/2 large bell pepper, sliced
- 1 Tbsp olive oil, optional
- salt and pepper, to taste
Directions
- Prehear oven to 350F. Grease and butter a baking sheet.
- Unwrap sausage from casing. Mix in eggs, cheese and 1/4 cup bread crumbs. Form into 4 balls and coat with remaining bread crumbs.
- In a skillet over medium high heat, sear meatballs until golden brown- 2-3 min/side.
- Place meatballs on baking sheet and bake for 15-20min
- Meanwhile, sauté onion and bell pepper until softened.
- Plate meatballs on top of veggies. Serve and enjoy!
