Recipe Post: Easy (cheater) Meatballs

Hi! More stress- free quarantine meals are here! This one uses some more shortage friendly ingredients.

With that said, let’s get cooking!


Easy Meatballs

Ingredients

  • 4 3oz Keilbassa links
  • 2 eggs
  • 1/2 cup panko bread crumbs
  • 2tbsp grated cheese
  • 1/2 large onion, sliced
  • 1/2 large bell pepper, sliced
  • 1 Tbsp olive oil, optional
  • salt and pepper, to taste

Directions

  1. Prehear oven to 350F. Grease and butter a baking sheet.
  2. Unwrap sausage from casing. Mix in eggs, cheese and 1/4 cup bread crumbs. Form into 4 balls and coat with remaining bread crumbs.
  3. In a skillet over medium high heat, sear meatballs until golden brown- 2-3 min/side.
  4. Place meatballs on baking sheet and bake for 15-20min
  5. Meanwhile, sauté onion and bell pepper until softened.
  6. Plate meatballs on top of veggies. Serve and enjoy!
