Tomorrow is the first day of my last semester in Uni. So, why not end the break with something easy and indulgent. What is more easy and indulgent than fall off the bone ribs.
A good family friend of ours makes amazing ribs with a brown sugar rub (翠花排骨). I could follow their recipe, or… I could attempt something of my own. Mum still wanted something sweeter so I went into a pantry and whipped up some teriyaki sauce. Four hours later, we feasted on some really good ribs…. really good. This is a simple recipe that will be the start of any potluck.
but first… some notes:
- Use spare ribs. They are fattier and we all know fat = flavour ><
- Do not attempt to put the cornstarch in directly. It will clump.
Enough said, let’s get cooking!
Ingredients
Ribs
- 1 rack of pork spare ribs
- Salt to taste
Sauce
- 1 cup + 2tbsp sugar
- 3/4 cup soy sauce
- 1.5 cup water
- 3tbsp oyster sauce
- 2 tbsp sesame oil
- 6tbsp corn starch
Directions
For the sauce
- Combine 1 cup and 2 tbsp water with sugar, soy sauce, oyster sauce and sesame oil in a small saucepan
- Simmer over low heat for 5-6min until sugar melts and begins to thicken. Stir constantly to prevent burning
- In a separate bowl, Stir remaining 6tbsp water with corn starch to form a slurry.
- Pour slowly into sauce while stirring. Continue cooking sauce on low heat until thickened to the consistency of a thick gravy.
- Remove from heat and set aside
For the ribs
- Preheat oven to 270F. Line a deep roasting pan with foil
- Place ribs in prepared pan. Salt and spoon on a generous layer of sauce
- Cover pan with foil and bake for 3.5hours
- Turn on the broiler. Remove foil cover and broil for 6-9 min or until a caramelised crust begins to form
- Serve and enjoy!
