Cinnamon Roll Kolache

Hi! Spring Break is over….. The grind is going to start up again, but not quite yet. I figured that I’d try something new to welcome in the new quarter. The item of choice? Kolaches

Kolaches are a traditional Czech pastry that are somewhere between brioche and danish. Traditionally, they’re a sweet filled with preserves and poppy seeds, but us Americans took it to another level and started playing around with flavours – cream cheese, sausage, Boudin….

A friend of mine happened to make cinnamon rolls. I figured I could make cinnamon roll kolache

These use a traditional kolach dough, but are filled with cinnamon sugar. I also mixed in some goat cheese for extra flavour

Notes

  1. Keep the cinnamon sugar mixture inside the dough when shaping the dough balls. Ignoring this will make the shaping and baking process stickier than necessary
  2. Don’t skimp on the rising time. It’s annoying, but the Czech do as many as 5 rises. 3 is a bargain!
  3. For a traditional oven, bake at 350F for 15 min. Rotate the trays 1/2 way through.

Cinnamon Roll Kolache

Ingredients

For the Dough

  • 3 cups flour
  • 1 cup whole milk
  • 5 tbsp sugar
  • 3tsp yeast
  • 4.5 tbsp butter
  • 3 egg yolks
  • 1/4 cup brown sugar
  • 1/2 tbsp cinnamon
  • egg wash (1 egg yolk, 1 tsp oil, 1 tsp water)

For the Filling

  • 6oz cream cheese
  • 4oz Chevre goat cheese (the spreadable type
  • 3-4 tbsp powdered sugar

Directions

For the Dough

  1. Combine 1 cup flour, 1 tbsp sugar and yeast with milk in a large mixing bowl. Cover and put in a warm place for about an hour. In the meantime, mix the remaining 2 cups of flour with the remaining 4 tbsp of sugar in a separate bowl and set aside
  2. After the yeasted mixture has doubled in size, melt the butter and when cooled, stir in egg yolks. Stir the egg and butter mixture in. Add the dry mix 1/2 cup at a time until a soft stick dough forms.
  3. Knead the dough for 10-15 minutes. Cover and put in a warm place until doubled in volume.
  4. Divide into 3 even portions and roll out into rectangles 1/3 -1/2 inch thick. Mix cinnamon with brown sugar and spread a layer onto each rectangle (there will be extra cinnamon sugar). Roll up like a carpet and cut each roll into 4 even pieces.
  5. Shape the cut pieces into balls. Take care to keep the cinnamon sugar on the inside. Cover and set aside in a warm place for 30-45min.

For the Filling

  1. Whip cream and goat cheese until well combined. Fold in sugar. Set aside and chill

Assembly

  1. Preheat air fryer to 350F
  2. Flatten the dough balls into thick disks and make a divet in the centres. Spoon a heaping tablespoon of cream cheese filling into the divets
  3. Brush with egg wash and air fry for 9 minutes.
  4. Serve and enjoy!
