Stir fried peppers with pork is probably the most common Hunanese dish. It’s simple and delicious- provided you can handle the spiciness. The dish is usually made with “5 layer meat” or fatty meat from the pig’s leg or belly, but any cut of pork will do. It can even be made using offal, such as the liver or heart. Enjoy!
Stir fried Peppers with Pork
Ingredients
- 250g pork, in wide thin pieces (片)
- 5-6 green jalepeños
- salt
- garlic, minced
- oil
- ginger, in thin strips
- soy sauce, scant
Directions
Heat a wok to high, add the pork, ginger, garlic and some salt. Stir fry until 70% cooked (around 3 minutes). If using a fatty cut, first render out some of the fat. Remove from heat and set aside. Next, stir fry the peppers with some salt until slightly softened (around 5 minutes). For the best results, use the rendered pork fat. Remove and set aside. With the heat on high, add in the pork and peppers with a little bit of soy sauce and stir fry for an additional 2 minutes. Remove from heat, serve and enjoy!!!!
