Well, my dad decided to try something new yesterday.

A Bowl of Fragrance (一碗香)is a classic Hunanese comfort dish. Enjoy!
A Bowl of Fragrance
Ingredients
- 5-6oz pork loin, sliced
- 2 large or 3 medium jalapeños, roughly chopped
- 3 eggs, beaten
- 3-4 cloves of garlic
- 6-9tbsp oil, divided
- 2-3 tbsp water
- Ginger, sliced, to taste
- Salt, to taste
- 1-1.5tbsp soy sauce
- 2tsp cooking wine
Directions
- In a wok over medium high heat, stir fry pork with salt in 2-3 tbsp oil for 20-30sec. Add cooking wine and continue stir frying for another 30-40 sec. The pork should be white from the outside but slightly pink inside. Remove from heat and set aside.
- Heat another 2-3 tbsp oil on high heat. Add garlic and ginger. When fragrant, add in the peppers and stir-fry for 2-2.5 min or until softened. Add chicken stock to prevent burning. Remove from heat and set aside
- Turn heat down to medium. Add the remaining oil into the wok and scramble eggs until the mixture holds shape, but slightly soft. Remove from heat and set aside.
- Turn heat back up to high. Reheat pork and pepper mixture for 1-2 min. Add in eggs and soy sauce. Stir fry for a another 30sec to 1 min or until eggs are well distributed in the mixture.
- Remove from heat. Serve and Enjoy!

Note: This is a great dish to make with any leftover stir fry. And, for real authenticity, throw in a spoonful or two of pickled chopped peppers!
