Salt Water Poached Chicken Thighs

Hi! It’s already October! Classes are going very well- nothing too hard, just some assignments are disproportionately time consuming…. and of course…. more reading 😉

On the culinary front, I still have 15 or so pounds of chicken in the fridge, so let’s dive in for more chicken!

Salt water poached chicken or duck is one of my favourite dishes. There’s something so addicting about the springy, flavourful meat. It’s also the perfect meal prep food- no need to reheat! Turns out, it’s as simple to make as it’s delicious!

I like it as is, but it’s also delicious with scallion oil, chili oil or garlic soy sauce.

Notes:

  1. Use bone- in, skin on meat. It prevents overcooking AND just tastes better
  2. Don’t skimp on the marinating! The salt isn’t just for flavour. It draws water out and helps create a springy, smooth mouthfeel

Salt Water Poached Chicken Thighs

Ingredients

  • 1lb bone in, skin on chicken thighs
  • 1tsp salt+ more for the water
  • Whole spices, optional
  • Chili oil, for serving

Directions

  1. Rinse chicken and pat dry. Rub evenly with salt and marinate for 3-5 hours.
  2. Place chicken in pot with enough water to cover. Add salt to taste. Bring water to a boil, then reduce to a simmer.
  3. Simmer for 20-25 min. It is done when there’s no blood when the meat is pierced with a chopstick. Remove from heat and let rest for 1-2 min
  4. Slice, serve and enjoy!
