Sourdough Soda Bread

Hi!! As you’ve probably noticed, I’m posting more than usual. Classes have wound down assignments for midterms and my research work has wound down a bit.

My friends have been on a sourdough kick lately. I was considering trying to make some of my own, but yeah… there’s no way I’m putting the effort into raising the starter…. Seriously though, it requires a FEEDING SCHEDULE!!

I had been making some yoghurt with probiotic pills. Probiotics make lactic acid -> lactic acid is sour -> why not try fermenting flour with the probiotics to make sourdough!

Turns out, fermenting with probiotics is actually a thing! The problem is that bacteria in probiotics doesn’t produce CO2 so the bread does need extra leavening. I found a recipe online and modified it a bit to make things easy….. and… it worked!

Sourdough Soda Bread

Ingredients:

  • 220g flour, divided
  • 1 probiotic pill
  • 160ml water (divided into 1/2 cup+1/2tbsp and 2tbsp+1/2 tsp)
  • 1.5 tsp baking powder
  • 1/2 tsp salt

Directions:

  1. In a bowl or mason jar, combine 110g flour, the contents of the probiotic pill and 1/2 cup+1/2tbsp water.
  2. Turn the oven to warming (or bread proof). Put flour, water, probiotic mixture in the over and allow to ferment for 20 – 24hours. Alternately, use a yoghurt maker and ferment for 12 hours.
  3. Line small loaf pan with parchment paper. I used a medium sized glass tupperware container 🙂 Place in oven and preheat to 375F. In a large bowl, combine fermented mixture, the remaining flour and water with a stand mixer on high to knead.
  4. Place dough into preheated loaf pan. Bake for 40-45 min or until a toothpick inserted in the center comes out clean
  5. Slice, serve and enjoy!

Note: Unlike traditional sourdough, this bread is crumbly and dense like soda bread, but has the classic sour taste and amazing crust.
