Peppermint Fudge

Hi! I know it’s been a while, but guess what, the semester is over!! I survived the combination of overloading classes, grad school applications and helping a professor write a book. All that’s left is to kill my last exam next week!

Now thst the holiday season is in full swing, I thought I’d come with an easy festive treat: peppermint fudge!

This is perfect for parties, snacking and even as a gift. I made these for my project team, who’ve worked extremely to get our project done. So, let’s get cooking!


Peppermint Fudge

Ingredients 

  • 3cups whole milk
  • 1 tsp peppermint extract (alternately, 10-12 mini candy canes)
  • 1.5 cups chocolate chips, any type 
  • 1tbsp butter

Directions 

  1. Line a medium sized rectangular Tupperware container with foil or parchment paper. 
  2. Put milk and peppermint extract (or candy canes) in a pot over low heat. Summer until reduced by 2/3rd. Remove from heat. Alternately, mix store bought evaporated milk with peppermint extract 
  3. Place 7oz of the condensed milk mixture back in the pot with chocolate chips and butter. Melt over low heat. Once melted, pour into prepared container. Refrigerate for at least 3 hours
  4. Serve and enjoy!
