Happy Easter! I hope everyone spends some time with family, friends and, of course, great food. I thought I’d chip in with a twist on a nice tea-time favourite. Strawberry scones! These scones are perfect for breakfast, tea time or just a midday sweet treat.

Using ice cream adds flavour and richness. One caveat is that since ice cream already contains eggs and sugar it carmelises faster, so be sure to turn down the heat.
With that said, let’s get cooking!
Strawberry Scones
Ingredients
For the Scones
- 1 cup flour
- 1/4 cup strawberry ice cream, melted
- 1 egg white
- 3 tbsp butter, frozen
- 2 tbsp white sugar
For the Glaze
- 1/4 cup strawberry ice cream, melted
- 2-3 tbsp sugar
- 1/2 tsp lemon juice
Directions
Scones
- Mix flour and sugar in a bowl and egg white and ice cream in another
- Cut (or grate) butter into the flour and use hands to mix into flour until the mixture resembles breadcrumbs
- Mix the wet ingredients with the dry and form into a ball. Wrap and refrigerate for 20min. In the meantime, preheat oven to 350F. Line a baking sheet with parchment paper
- Form dough into a disk 2inches thick. Cut into quarters. Bake for 15-20min or until the top browns. Allow to cool completely
Glaze
- Mix ice cream with sugar and lemon juice
- Chill for 15-20 min and keep chilled
Assembly
- Once scones are COMPLETELY COOLED, Spoon glaze onto the top and spread evenly.
- Serve and enjoy!
