Recipe Post: Peanut Butter Toffee

Guess what, I’m back again! This time, I decided to dip my fingers into confection and have another great treat for Valentine’s day! And… unlike those sticky cookies, these are perfect for giving! So, let’s get cooking!


Ingredients

  • 3Tbsp butter
  • 1Tbsp peanut butter
  • 1/4 cup sugar
  • 1Tbsp water

Directions

  1. Line a baking sheet with foil/parchment paper. In a small saucepan, melt butter and peanut butter over medium-low heat.
  2. Whisk in sugar and stir constantly for 10-15 min. The mixture is done when it’s fragrant, pulls away from the sides and form strings. To test, take a bit out of heat. If it hardens, the mixture is done.
  3. Pour finished toffee onto the prepared surface and form into a rectangle. Using a spatula, make 4-6 indentations to create “bars”. Cool for at least 2 hours.
  4. Cut out bars, serve and enjoy!

Confection can be tricky, but here are some very helpful tips:

  1. Keep the heat LOW. The caramelization process is VERY slow, but be patient
  2. Stir nonstop and be sure not to miss the sugar sticking to the sides of the pan
  3. Do NOT attempt to taste or touch hot toffee- sugar caramelizes at 340F!
