Lightened French Toast

Hi!! School starts tomorrow. As suboptimal as online learning is, my new classes sound amazing, and I’m excited to get started.

Now, onto the food. I’ve made some pretty crazy delicious French toast before (Here and Here), but let’s be honest, they’re anything BUT healthy. Here’s a very simple healthier alternative that’s (almost) as good. Enjoy!

Lightened French Toast

Ingredients

  • 4 slices of sprouted grain bread
  • 1 cup egg whites
  • 2 tsp cinnamon
  • 2 tsp vanilla extract
  • 2-3 packets of Stevia
  • Toppings, to taste

Directions

  1. Whisk together the egg whites, cinnamon and vanilla extract
  2. Soak the bread in the egg whites for at least 15 min, preferably 30+ min, especially if using sprouted grain bread. There should be very little egg whites left
  3. Sprinkle stevia and some more cinnamon over the top of each slice
  4. Broil for 8-12 min or until well browned. Top with (preferably healthy) toppings. I suggest natural peanut butter, sugar free syrup or fruit
  5. Serve and enjoy!
