Hi! I’m a day late, but better late than never right.
While I usually try to keep things healthy, I definitely like to venture into the more sinful side once in a while. Fried pork chop is one of those universally loved dishes. Fatty, crispy, easy and cheap- what’s not to love! (Don’t worry, I’ll give a healthier alternative below…)
Although simple, there are some important things to keep in mind:
- Double dip. What’s better than fat? Carbs and fat! Double dipping ensures a nice thick coat of the seasoned flour sticks (you did season right…)
- Fry in MEDUIM high heat, and don’t forget to turn the heat down. Metal pans retain heat and you’d probably be surprised how quickly it can go from perfectly golden brown to disgustingly burnt
- SEASON, SEASON, SEASON!!!!!!!!!!!!!!!!
With that said, let’s get cooking
Pan Fried Pork Chops
Ingredients
- 2 10oz bone in pork chop
- 3 eggs
- 2/3 cup flour
- Seasoned salt, to taste
- salt, to taste
- 1 – 1.5 cups oil
DIrections
- Season pork chops generously with salt. Pound until nearly translucent (about 1/8in thick)
- In a large wide bowl, whisk eggs. In a separate bowl, mix flour with a generous amount of seasoned salt
- Dip meat into egg mixture, place in flour and shake off the excess. Repeat, then place on a rack to dry a bit.
- In a frying pan (preferably cast iron), heat oil on medium high heat. Tip: cut a small piece of meat as a tester- it should sizzle Reduce heat slightly and fry pork chops for 4-5 min/ side. The meat should have a golden brown crust.
- Reduce heat to low and continue cooking for about 3-4 min/side or until thoroughly cooked through. Rest on a wire rack for 1-2 min to drain
- Serve and enjoy!
