Liver Pate with (Keto) Soda Bread

Hi! I’m back earlier than usual, but since research has been a bit slow (no more math courses to blame), I’ve gotten busy in the kitchen!

I LOVE liver. It gets a bad rap, but it really doesn’t deserve so much hate. It’s versatile, cheap and incredibly nutritious. A mere 3oz serving has 23g of protein along with over 300% the RDA of vitamin A, 84% the RDA of iron, plenty of vitamin K, B-6 and B-12.

Of course, nutrition doesn’t really matter if taste is off right? Well, here are some tips:

  1. Soak the liver in milk, or better yet, buttermilk, for at least 2 hours. The dairy helps neutralize the flavour and even better helps the liver absorb butter
  2. SEASON, SEASON, SEASON- duh….

So now that I’ve convinced you to try liver, let’s get cooking!


Liver Pate with (Keto) Soda Bread

Ingredients

For the Pate

  • 8oz liver
  • salt, to taste
  • 5 cloves garlic, chopped
  • 1/4 medium onion, sliced
  • 2tbsp cream
  • 2tbsp butter
  • fresh herbs (garnish)

For the Soda Bread

  • 1/2 cup almond flour
  • 2tsp baking powder
  • 6tbsp water
  • salt, to taste

Directions

For the Pate:

  1. Melt butter in skillet over medium high heat. Once butter is melted and hot, place liver in and sear for 3-5 min or until fully cooked. Salt generously. Place into food processor
  2. Using the excess fat in the pan, sautee onions and garlic until softened. Place in food processor with liver
  3. Add cream, excess fat and more salt (if desired) to the liver and onion mixture.
  4. Blend until smooth. Add more cream if necessary
  5. Transfer into a bowl, garnish, with fresh herbs

For the Soda Bread

  1. Preheat oven to 350F
  2. Combine flour, salt and baking powder in a small bowl
  3. Add water until the mixture takes a dough like consistency
  4. Divide into two, form into a thick disk and Bake for 15 min or until risen and cooked through
