Stuffed Duck Head

The experimentation continues! Warning though, this one is a lot.

Mum went to the Chinese market and bought me a treat

That’s right, duck head. While duck head sounds exotic or scary, it’s actually a VERY popular snack in China. Companies like 周黑鸭 sell millions of these a year

Of course, I’m wasn’t going to settle for simple braised duck head. Two episodes of Great British Menu later, I had a crazy idea- what if I stuffed the heads. Yes… stuffed duck head.

Well, let’s get cooking!

First the hard part: Debone the duck head.

Hard part over. The rest was easy. I threw 3.5oz pork butt with 1 egg and a generous amount of salt and seasoning in a food processor and filled the heads. Then air fried them at 385 for 11min and they’re done!

I’m going to toot my own horn. I’m beyond proud of this. However, it’s far from perfect.

  1. Next time, I’m going to incorporate duck into the meat mix, at least a 1:1 duck: pork ratio, bonus for using duck egg yolk!
  2. MORE FLAVOUR!!!!! More salt in the meat, possibly also marinading the heads before hand too
  3. I forgot to dry out the duck skin…. rookie mistake. It was still crispy, but not the crunchy magic that could be achieved with a couple minutes under the blow dryer
