All Purpose Muffin Recipe

HI! I’m ready to get back to down earth after some out of this world experimentation 😉 In that spirit, what’s more down to earth than a simple muffin.

I’ve generally avoided baking here on the Red Braised Twinkie, and for good reason. Baking is a delicious chemistry experiment. It requires precision, temperature control and skill. Yeah, I don’t have time for that….. BUT, I’ve been doing some experimentation and came up with a ridiculously simple and versatile recipe.

Plain Jane

Base recipe: Plain Muffin

Ingredients:

  • 1/2 cup flour
  • 2- 3tbsp sugar
  • 1tsp baking soda
  • 1 egg
  • 1/4 cup milk

Directions

  1. Preheat oven to 350F (175C). Line a cupcake tin with liner. Mix flour, sugar and baking powder in a large bowl. In a separate bowl, whisk egg with milk until smooth
  2. Combine wet ingredients with dry. Pour into prepared tin. Bake for 25-28min or until a toothpick inserted in the center comes out clean

PB&J

Flavoured Muffin

Ingredients:

  • 1/2 cup flour
  • 2- 3tbsp sugar
  • 1tsp baking soda
  • 1 egg
  • 1/4 cup milk
  • 2-3 tbsp add ins

Directions

  1. Preheat oven to 350F (175C). Line a cupcake tin with liner. Mix flour, sugar and baking powder in a large bowl. In a separate bowl, whisk egg with milk until smooth
  2. Combine wet ingredients with dry. Stir in add ins
  3. Pour into prepared tin. Bake for 25-28min or until a toothpick inserted in the center comes out clean

Some ideas:

  • Chocolate chips
  • nuts
  • fruit/dried fruit
  • 1/2 PB+ 1/2 Jelly
  • Nutella

Mozzarella

Savoury Mozzarella Muffin

Ingredients:

  • 1/2 cup flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1tsp baking soda
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup grated mozzarella

Directions

  1. Preheat oven to 350F (175C). Line a cupcake tin with liner. Mix flour, sugar, salt, mozzarella and baking powder in a large bowl. In a separate bowl, whisk egg with milk until smooth
  2. Combine wet ingredients with dry. Pour into prepared tin. Bake for 25-28min or until a toothpick inserted in the center comes out clean

This recipe isn’t limited to muffins- Pancakes and Brownies anyone?

Classic Pancakes

Pancakes

Ingredients:

  • 1/2 cup flour
  • 2tbsp sugar
  • 1tsp baking soda
  • 1 egg
  • 1/3-1/2 cup milk

Directions

  1. Mix flour, sugar and baking powder in a large bowl. In a separate bowl, whisk egg with milk until smooth
  2. Combine wet ingredients with dry.
  3. Heat a non stick pan or griddle on medium high heat. Dollop on 2tbsp of batter. When the edges become firm and bubble, flip and continue cooking until cooked through.

Rich Brownies

Basic Brownies

Ingredients:

  • 1/2 cup flour
  • 3tbsp cocoa powder
  • 3-4 tbsp sugar
  • 1tsp baking soda
  • 1 egg
  • 1/4 cup oil
  • milk, add as needed
  • Chocolate chips

Directions

  1. Preheat oven to 350F (175C). Grease and flour a muffin tin. Mix flour, sugar, cocoa powder and baking powder in a large bowl. In a separate bowl, whisk egg with oil until smooth
  2. Combine wet ingredients with dry. The batter should be slightly thicker than a typical cake batter. Add extra milk if necessary Stir in chocolate chips.
  3. Pour into prepared tin. Bake for 25-28min or until a toothpick inserted in the center comes out clean
