Perfect Poached Chicken

Hi!!! I’m back. It’s been two weeks since school started and time has gone by WAY too quickly. My coursework this semester is pretty light, but I’ve been busy catching up …. and reading…. so much reading (Note: now that I’m not taking any maths courses, “reading” will be a consistent theme here)

Being on campus is amazing. I feel like a better person surrounded by professors, friends and brilliant/interesting person in general. However, although the dorm has an amazing kitchen, I don’t have the luxury of being within 20m of the kitchen at all times. I’m also on a budget. There’s only one option: Chicken…. lots of chicken…..

Chicken breast gets a bad rap as dry and boring. Poached chicken breast is basically the culinary equivalent of waiting in line. BUT… I don’t back down from a challenge. After some tinkering, I’ve finally got it down!


Perfect Poached Chicken

Ingredients:

  • 2 6-8oz boneless skinless chicken breast (about 1/2in thick)
  • Salt, to taste (be GENEROUS)
  • Chicken stock
  • spices, optional

Directions:

  1. Generously salt chicken. Marinate for 30 min.
  2. Place chicken in a pot and cover with stock.
  3. Turn stove up to high and when the stock begins to bubble, but not boil, turn heat down to medium low. Allow the meat to poach for an additional 6-7 minutes.
  4. Remove from heat and rest for 1-2 min before
  5. Slice, pack and enjoy!
