Recipe Post: Banana Pancakes

Hi! I’m here today with some breakfast/ brunch… because why not!

This recipe was originally just me winging it one day for my little brother. He loved it!

Last weekend, I went to brunch at a friend’s house and I took the opportunity to finally get the recipe down.

Guess what, they loved it!

So… Let’s get cooking!



Banana Pancakes

Ingredients

  • 2 cups flour
  • 6 tbsp sugar
  • 3 large bananas, very ripe
  • 2tsp baking powder
  • 1 cup milk
  • 3 large eggs

Direction

  1. Peel and cut bananas. Place in a bowl and microwave for 1-3 minutes (depending on ripeness). Mash until liquefied and cool
  2. Mix flour, sugar and baking powder in a bowl
  3. In a separate bowl, combine bananas, eggs and milk. Whisk until smooth
  4. Combine wet and dry ingredients. Be careful not to over work the batter. Some lumps are okay!
  5. Heat a pan on medium high heat. Spray generously with cooking spray. Drop some water or batter into the pan. When it sizzles, place 1/4 cup rounds of batter into the pan.
  6. When the edges bubble, lower heat to medium/medium low and cook for an additional 1-2min or until cooked. Be careful not to burn!
  7. Serve and enjoy!
