GochuJang Fudge

Hi!! Today’s recipe is brought to you by my team. We had a little spring break get together and they challenged me to come up with something unique. Since one of them is Korean, I decided to channel her and came up with…. Gochujang fudge!

What is Gochujang? Spicy Korean bean paste. It has the deep, salty umami of miso with an intense spicy kick. Gochujang is usually reserved for savoury dishes, but if miso chocolate is a thing, so can Gochujang chocolate!


Gochujang Fudge

Ingredients

  • 1 cup milk*
  • 1/3 cup sugar
  • 1/2 tbsp gochujang
  • 3tbsp cocoa powder+more for dusting

Instructions

  1. In a saucepan over medium heat, combine milk, gochujang and sugar. Bring to a simmer.
  2. Simmer for 45-60 min on medium low heat, stirring constantly until reduced by 2/3.
  3. Reduce heat to low, stir in cocoa powder until fully incorporated. Remove from heat and chill 20-30 minutes.
  4. Grease and flour your hands. Scoop out fudge and roll into balls. Dust in cocoa powder
  5. Serve and enjoy!

Note to skeptics: The fudge doesn’t taste of beans! The gochujang adds depth and a very sneaky heat
