Gochujang Cookies

Hi! I’m back in the kitchen with another recipe. This week is a true classic: Cookies. Not just any cookies…. Gochujang cookies. Yep, another installment of “getting canceled in Korea” ><

What is gochujang? Gochujang is a spicy, slightly sweet Korean fermented bean past that is traditionally eaten with meat or in soups. Much to the ire of my Korean friends, I decided to throw to into fudge and the results were amazing. Now gochujang cookies. The spiciness, salinity and funkiness add an incredible depth of flavour spices up plain sugar cookies without ANY extra effort!

So, Let’s get cooking!


Gochujang Cookies

Ingredients

  • 1 cup Flour
  • 1/3 cup butter
  • 6tbsp cup sugar
  • 1 tbsp Gochujang
  • 1 egg yolk
  • 1tsp baking powder, optional

Directions

  1. Preheat oven to 370F. Line a baking sheet with parchment paper
  2. Sift flour and baking powder (if using) in a medium sized bowl. In a separate bowl, cream together butter and sugar until fluffy. Then blend in gochujang and egg yolk
  3. Combine dry ingredients with the wet and mix until a dough forms. Wrap dough ball in plastic wrap and refrigerate for 2 hours (alternately, freeze for 30 min)
  4. Divide dough into 8 even sized portions. Roll into a ball, then flatten into a circle 1/3in thick. Bake for 9-10 minutes or until bottom begins to brown
  5. Serve and enjoy!
