Low Sugar Protein Fudge

Hi! I’m back with a recipe. I’ve made quite a few types of fudge, but none of them are remotely appropriate for sticking to healthy eating goals. This past week, there was no analysis homework, plenty of protein powder and free milk in the fridge. What else was I supposed to do with 10 extra hours?

Make food of course! Specifically, protein fudge:

The recipe is the same setup as the gochujang fudge or sour milk brigadieros, but, with no sugar and protein powder. Although simple, this did take me a few attempts to get the ratios right. Now that everything is figured out, enjoy some macro friendly fudge that is (almost) as delicious as the original


Low Sugar Protein Fudge

Ingredients

  • 2 cups milk
  • 9-12 packets of splenda (alternately, use stevia)
  • 1.5tbsp plant based protein powder

Directions

  1. In a suacepan over medium low heat, stir milk with sweetener until reduced to 1/2 cup. Alternately, use 1/2 cup of evaporated milk.
  2. Once reduced, remove from heat and stir in protein powder until fully incorporated. The mixture should pull away from the pan.
  3. Pour into mold and chill for 1-2 hours. Serve and enjoy!
