Hi!! I hope everyone’s staying safe and healthy. On my end, being stuck inside means more time in the kitchen. Here’s an easy, healthy breakfast to brighten up the day!
Ingredients
- 4 large eggs
- 1 medium bell pepper, diced
- 1/2 large onion, diced
- 1 cup spinach, packed
- 6Tbsp shredded cheese
- 1/4 cup milk
- Salt and pepper, to taste
Directions
- Preheat oven to 350F. Grease and flour a muffin tin or use cooking spray.
- Whisk eggs with milk, cheese, salt and pepper.
- In a pan over medium- high heat, sauté onions, peppers until softened, then add spinach and continue cooking until the leaves are wilted
- Mix veggies into egg mixture and pour into muffin tin. Bake for 18-20 min or until fully cooked.
- Serve and Enjoy! Note: Wait for the fritatas to cool a bit before removing from tin. They come out much easier with a bit of patience 🙂
