Recipe Post: Easy Veggie Fritattas

Hi!! I hope everyone’s staying safe and healthy. On my end, being stuck inside means more time in the kitchen. Here’s an easy, healthy breakfast to brighten up the day!


Ingredients

  • 4 large eggs
  • 1 medium bell pepper, diced
  • 1/2 large onion, diced
  • 1 cup spinach, packed
  • 6Tbsp shredded cheese
  • 1/4 cup milk
  • Salt and pepper, to taste

Directions

  1. Preheat oven to 350F. Grease and flour a muffin tin or use cooking spray.
  2. Whisk eggs with milk, cheese, salt and pepper.
  3. In a pan over medium- high heat, sauté onions, peppers  until softened, then add spinach and continue cooking until the leaves are wilted
  4. Mix veggies into egg mixture and pour into muffin tin. Bake for 18-20 min or until fully cooked.
  5. Serve and Enjoy! Note: Wait for the fritatas to cool a bit before removing from tin. They come out much easier with a bit of patience 🙂
