Banana Oatmeal Pancakes

Hi! It’s been a while, but I’m back! Cabin fever is seriously setting in, but we’re holding up surprisingly well.

With that said, I have a delicious, healthy breakfast recipe to kick off the day.


Banana Oatmeal Pancakes

Ingredients

  • 2 cups oats
  • 4 small bananas
  • 1/4 cup egg whites
  • 1tsp baking powder
  • cinnamon, to taste

Directions

  1. Place oats, bananas and cinnaon in a blender. Pulse until smooth.
  2. Transfer into a bowl and stir in egg whites until well incorporated.
  3. Heat a nonstick pan on medium high heat (or use generous amounts of cooking spray). Drop in batter in 2tbsp circles. Tip: Make sure the pan is sizzling  to prevent sticking
  4. Cook for 2-3 minutes per side.
  5. Serve and enjoy!
