Hi! It’s been a while, but I’m back! Cabin fever is seriously setting in, but we’re holding up surprisingly well.
With that said, I have a delicious, healthy breakfast recipe to kick off the day.
Banana Oatmeal Pancakes
Ingredients
- 2 cups oats
- 4 small bananas
- 1/4 cup egg whites
- 1tsp baking powder
- cinnamon, to taste
Directions
- Place oats, bananas and cinnaon in a blender. Pulse until smooth.
- Transfer into a bowl and stir in egg whites until well incorporated.
- Heat a nonstick pan on medium high heat (or use generous amounts of cooking spray). Drop in batter in 2tbsp circles. Tip: Make sure the pan is sizzling to prevent sticking
- Cook for 2-3 minutes per side.
- Serve and enjoy!
