Recipe Post: Kimchi Tofu Stew

Another day, another recipe! My parents got some kimchi and tofu before the Asian store closed, and I decided to dip into the precious Asian stores. I must say, it was 1000% worth the splurge.


Kimchi Tofu Stew

Ingredients

  • 1 package (16oz) firm tofu, cubed
  • 1 large onion, sliced
  • 1 cup kimchi, chopped
  • 6 cups chicken stock
  • 3/4 cup kimchi juice
  • 4 eggs
  • salt and pepper, to taste

Directions

  1. Place tofu, kimchi and kimchi juice into a bowl. Set aside to marinate.
  2. In a pan over medium-high heat, sauté onions until cooked.
  3. Add cooked onion, tofu, kimchi, kimchi juice and chicken stock to a pot. Bring to a boil, then reduce heat.
  4. Simmer for 15-20 min. Reduce heat, then stir in egg until cooked, 2-3 min.
  5. Serve and enjoy!
