Another day, another recipe! My parents got some kimchi and tofu before the Asian store closed, and I decided to dip into the precious Asian stores. I must say, it was 1000% worth the splurge.
Kimchi Tofu Stew
Ingredients
- 1 package (16oz) firm tofu, cubed
- 1 large onion, sliced
- 1 cup kimchi, chopped
- 6 cups chicken stock
- 3/4 cup kimchi juice
- 4 eggs
- salt and pepper, to taste
Directions
- Place tofu, kimchi and kimchi juice into a bowl. Set aside to marinate.
- In a pan over medium-high heat, sauté onions until cooked.
- Add cooked onion, tofu, kimchi, kimchi juice and chicken stock to a pot. Bring to a boil, then reduce heat.
- Simmer for 15-20 min. Reduce heat, then stir in egg until cooked, 2-3 min.
- Serve and enjoy!
