I’m always surprised at how quickly the year passes, but this year, everything’s been a blur! Before I know it, It’s fall again!
Well, I’m just in time for Pumpkin Spice Lattes and some seriously hearty meats. Here’s an easy, delicious pot roast recipe for the chilly days to come!
Simple Potato Beef Pot Roast
Ingredients:
- 1lb Beef Chuck, cubed
- 2 cups tomato sauce
- 2/3 cup chicken stock
- 5-7 baby potatoes, halved
- Salt, to taste
- Pepper, to taste
- Spices, to taste
Directions:
- In a pan over medium heat, sear the beef until browned. Salt and pepper to taste. Be careful, store bought tomato sauces are often already quite heavy in salt, so remember to adjust accordingly. Tip: Massage 1tbsp of soy sauce into the meat before searing- reduce salt by 25-30%
- Transfer meat into a slow-cooker, add liquid and spices and stew for 60-90min depending on the power of the slow cooker. Note: if the slow cooker is pressurized, cut cook times in half)
- Add potatoes (or other veggies) and cook for an additional 20-30 min.
- Serve and Enjoy!
