This week’s recipe is three tries in the making.
One of my favourite snacks (yes snack) growing up were the mini brownies from Costco. Of course, I’ve long since given up such sugary treats, but I still enjoy the challenge of creating healthy versions some of those sinful favourites
Black bean brownies are a classic “health hack”. I decided to try a recipe of my own. Unfortunately, the first two tries turned into soupy messes. I finally got it right this time!
So, let’s get cooking!
Healthy Black Bean Brownies
Ingredients
- 1 can (15oz) low/no sodium black beans
- 1/4 cup flour
- 1/4 cup cocoa powder
- 13-15 packets Stevia
- 1/2 cup egg whites
- 1tsp baking powder
- 3tbsp no sugar added apple sauce
Directions
- Preheat oven to 350F. Line a cupcake tin with 5 liners. Rinse beans. Place in food processor and puree until smooth.
- In a large bowl, combine flour, stevia and baking powder. Add bean puree, egg whites, and apple sauce. Mix untill well incorporated.
- Bake for 30-35min or until a toothpick inserted into the center comes out clean.
- Serve and enjoy!

Notes:
- If using gluten free flour, use gluten free BREAD flour. The brownies need a binder or they will not set/hold together. Low carb flour alternatives (almond, coconut…) won’t work either. My first (failed) batch was done with almond flour and the second batch was with coconut
- The apple sauce is used as a healthy replacement to oil/butter. You could also try Greek yoghurt, sour cream, cream cheese, mashed avocado, and of course, actual oil/butter. The measurement doesn’t change
