Recipe Post: Parmesan Collard Green Stuffed Chicken Thighs

Hi!! Things have definitely taken a turn….. I’ve been extremely lucky in that I haven’t had to significantly change my lifestyle, but I know most people can’t say the same. My heart goes out to anyone affected by the COVID-19 epidemic.

With that said, campus dining has been extremely limited, so time to get creative in the kitchen! Here’s a easy, delicious, healthy recipe perfect for any occasion. Let’s get cooking:


Parmesan Collard Green Stuffed Chicken Thighs

Ingredients:

  • 4 4oz boneless skinless chicken thighs, pounded
  • 5 cups collard green
  • 1 cup chicken stock
  • 4 tbsp grated parmesan
  • salt and pepper, to taste
  •  butter, optional

Directions

  1. in a pan over medium heat, sautee 1/2 cup collard greens until wilted. Chop finely and mix with parmesan
  2. Season chicken liberally with salt and pepper. Place 1tbsp of filling on each fillet and roll up or fold until the filling is enclosed. Be careful not to overstuff- the meat will shrink.
  3. In a pan over medium high heat, sear chicken rolls  until browned, about 2-3 min/side. In a separate pan, sauté greens until wilted, then add chicken stock. Reduce heat and bring to a simmer.
  4. Place seared chicken into greens and simmer until cooked, about 10-15 min. Serve and enjoy!
