Hi!! Things have definitely taken a turn….. I’ve been extremely lucky in that I haven’t had to significantly change my lifestyle, but I know most people can’t say the same. My heart goes out to anyone affected by the COVID-19 epidemic.
With that said, campus dining has been extremely limited, so time to get creative in the kitchen! Here’s a easy, delicious, healthy recipe perfect for any occasion. Let’s get cooking:
Parmesan Collard Green Stuffed Chicken Thighs
Ingredients:
- 4 4oz boneless skinless chicken thighs, pounded
- 5 cups collard green
- 1 cup chicken stock
- 4 tbsp grated parmesan
- salt and pepper, to taste
- butter, optional
Directions
- in a pan over medium heat, sautee 1/2 cup collard greens until wilted. Chop finely and mix with parmesan
- Season chicken liberally with salt and pepper. Place 1tbsp of filling on each fillet and roll up or fold until the filling is enclosed. Be careful not to overstuff- the meat will shrink.
- In a pan over medium high heat, sear chicken rolls until browned, about 2-3 min/side. In a separate pan, sauté greens until wilted, then add chicken stock. Reduce heat and bring to a simmer.
- Place seared chicken into greens and simmer until cooked, about 10-15 min. Serve and enjoy!
