Hi, I’m back and very lucky to be safe with my family. The US has gone crazy over the past week, but it’s not my place to comment.
What I do know is that during stressful times, there’s nothing like comfort food to calm those nerves. So, I’m here with some serious comfort food: Chili!
Classic Chili
Ingredients:
- 18oz ground beef
- 2.5 cups tomato sauce
- 1/2 large onion, diced
- 3/4 large bell pepper, diced
- 1/3 cup chicken stock
- 1/2 large tomato, diced
- salt and spices, to taste
- 3tbsp olive oil
- diced garlic, to taste
Directions
- In a large soup pot over medium high heat, sautee onion and bell pepper with garlic and spices until softened and fragrant.
- Stir in ground beef and cook until browned. Add in tomato sauce, chicken stock and diced tomatoes. Bring to a boil. Add more salt if necessary.
- Reduce heat and simmer for 25-30min.
- Serve and enjoy!
