Pumpkin Spice Hummus

I hope everyone’s week is going well! Things are starting to get busy around here, but somehow I’m still relishing in the free time. Today, I finished a networking event and realized I had NOTHING to do and a can of chickpeas in the fridge. Normally, cooking is for the weekends, but the opportunity was too good to pass up. Why not whip up something quick?

Pumpkin Spice Hummus

It’s only September, but the Starbucks PSL is on the market! I guess I technically have a couple more months until I’m really “late”; however, I thought I’d try my hand at being on trend for once. Guess what’s also trending: Vegan recipes, mediterranean food and quick, easy, healthy desserts! Four trends in one and on time? I’m really crushing it 😉 Let’s get cooking


Pumpkin Spice Hummus

Ingredients

  • 1 can (1.5cups) chickpeas, rinsed and drained
  • 7tbsp pumpkin puree
  • Pumpkin Spice mix (to taste
  • Vanilla extract (to taste)

Directions

Place ingredients in a blender and puree until smooth. Serve and enjoy!
